Our Favorite Dinner

This is one of our family’s favorite dinners. There are a few things that everyone really likes, and this is one of them. Salmon is about the only fish we eat in our house and I usually cover it with lemon salt and dill and then broil it, but in this house with no real oven, and a BBQ that was crawling with ants, this time I made it in a frying pan on the stove. Couscous is very popular around here, but seems to end up all over the house whenever we have it, so it is a bit of a luxury. The mixed vegetables are a good compromise because I can tell Hunter to pick two vegetables that he’s willing to eat, and eat all of those on his plate. Anyway, now I have something for my recipe category!

    Veggies is the biggest obstacle in our house…with Gary too. I am the only one who eats them willingly.

    I never thought to do that with the mixed veggies and one of my picky eaters. I am totally going to try it, thanks! And now I want to try making salmon, yours looks so good!

    I really need to break down and try some salmon. Everyone seems to like it. My kids beg for fish constantly. I dont know if I ever told you that the tortellinin is a HUGE hit they ask for it constantly also. Thanks

    The closest we get to fish at our house is tuna fish, Mark and I aren’t big fans of fish. I’ve tried it here and there and given it a chance but It just doesn’t appeal to me. Maybe that’s because I haven’t had yours yet.

    Do you have a George Foreman grill, Amy? I cook salmon on ours all the time and it is SO fast…you really can’t beat it! We also like it when we marinate the salmon in Yoshida’s Original sauce…very quick and easy and everyone here eats it up!
